How we bake

Slow dough, early mornings

The open, airy crumb of a sourdough loaf, sliced lengthwise

Two days for every loaf

Every loaf takes two days. We mix one morning, let it rise slowly in the fridge overnight and bake it the next. That's why the crumb is open and the crust crackles.

Croissants, shaped by hand and rising before they go in the oven

Butter, folded by hand

Croissant dough is folded with cold butter over three days. No shortcuts, no margarine, no frozen dough.

Small batches, all morning

We bake through the morning instead of once at dawn, so there's always something warm on the counter.

The seeded sourdough is the best loaf I've had in Miami. I order it on the site Thursday night and it's waiting for me Friday morning.

Ordered the carrot cake for my daughter's birthday two days ahead. It looked exactly like the photo and nobody could stop at one slice.

Pastelitos still warm at 7:30 and a proper cortadito. Get there before 11 or they're gone.
